Rent a motorcycle, and bring your passport, just in case you decide to cross the border. I love riding Oregon and Washington in the summertime. 
The wine country in both states is just fantastic, and you can head to the beach — Cannon Beach is a foggy favorite, to Puget Sound, Whidbey Island, Port Townsend ("The New Orleans of the Pacific Northwest"), and Vancouver Island. Here’s some resources, in case you’re tempted:

From July 1, 2008 to October 31, BMW Motorcycles of Western Oregon — both the Eugene and Tigard locations — are renting these models: F 800 ST, R 1200 GS, and K 1200 GT. Each bike comes equipped with saddlebags, topcase, and tankbag. And if you want to experiment with a GPS, you can rent a BMW ZUMO GPS receiver for a $15 a day.

I love the Pacific Northwest, and have enjoyed a few of the wines from the region. A ride to Seattle on my V-Strom is on my list of rides to do.
